Pour ⅓ of the marinade over the steak, ⅓ marinade over vegetables, and reserve the remaining in a sealed jar for use when cooking the fajitas. Seal the container tightly and refrigerate for one hour or overnight.
When ready to cook, heat a large skillet over high heat. Set the heat to medium, pour the vegetables into the skillet and cook until crisp for around 5 minutes. Remove the vegetables from the skillet and add the steak strips to the same skillet. Cook steak thoroughly for about 10 minutes, add vegetables back to the skillet along with the reserved marinade.

Add onion, garlic and spices to skillet and stir it occasionally until softened. Add diced tomatoes with corn kernels, and stir until mixed thoroughly.
Add pork chops back to skillet. Bring heat to high, then reduce heat, cover partially and let it simmer for 30 minutes until the pork chops are done. Taste and adjust seasoning, add additional pepper and cilantro if needed.
